  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1/4 cup amaretto liqueur
  • 1 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. In a medium bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese and 1 cup sugar until smooth. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the amaretto liqueur, vanilla extract, and flour until well combined. Fold in the sour cream.
  5. Pour the cheesecake batter over the prepared crust in the pan.
  6. Bake the cheesecake in the preheated oven for 55-60 minutes, or until the center is almost set.
  7. Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 4 hours, or overnight, before serving.
  8. Slice and serve the amaretto cheesecake chilled, garnished with whipped cream and toasted almond slices if desired.
