2 cups all-purpose flour
2 cups grated carrots
1 cup sugar
½ cup vegetable oil
2 eggs
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla extract
Pinch of salt
Instructions
Preheat oven to 350°F (175°C).
Mix sugar, oil, and eggs in a bowl.
Add flour, baking powder, cinnamon, and salt.
Fold in grated carrots.
Pour into greased pans and bake 35–40 minutes.
For frosting, beat cream cheese, butter, vanilla, and sugar until smooth.
