  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • 2 cups finely chopped apples
  • 1/4 cup melted butter
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk together the eggs, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped apples until evenly distributed.
  6. Spoon the batter into the muffin tin, filling each cup about 3/4 full.
  7. Bake for 20-25 minutes until the fritters are golden brown and a toothpick inserted into the center comes out clean.
  8. Let the fritters cool for a few minutes in the tin, then transfer them to a wire rack to cool completely.
  9. Once cooled, drizzle the melted butter over the fritters and dust with powdered sugar.
