  • 1 lb boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup shredded carrots
  • 1 cup cucumber, sliced
  • 1/4 cup chopped green onions
  • 1/4 cup chopped peanuts

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  3. In a shallow dish, mix together the panko breadcrumbs, garlic powder, and onion powder.
  4. Dip each piece of chicken into the breadcrumb mixture, making sure to coat evenly.
  5. Place the coated chicken pieces on the prepared baking sheet and bake for 20-25 minutes, until golden brown and cooked through.
  6. While the chicken is baking, prepare the sauce by mixing together the mayonnaise, sweet chili sauce, honey, soy sauce, and lime juice in a small bowl.
  7. Once the chicken is done, remove from the oven and toss in the sauce until well coated.
  8. To assemble the bowls, divide the cooked rice among serving bowls and top with the bang bang chicken, shredded carrots, cucumber slices, green onions, and chopped peanuts.
  9. Drizzle any remaining sauce over the bowls and serve hot.
