  • 1 bag tortilla chips
  • 1 cup shredded cheddar cheese
  • 1 cup shredded monterey jack cheese
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream
  • 1/4 cup sliced jalapenos

Instructions

  1. Preheat your oven to 350°F.
  2. Grease a bundt pan with cooking spray.
  3. Layer half of the tortilla chips in the bottom of the bundt pan.
  4. Sprinkle half of the cheddar and monterey jack cheeses over the chips.
  5. Add half of the black beans, tomatoes, olives, red onion, and cilantro on top of the cheese.
  6. Repeat the layers with the remaining tortilla chips, cheeses, and toppings.
  7. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool slightly.
  9. Top with dollops of sour cream and sliced jalapenos before serving.
