Ingredients

Scale

Base Pudding Ingredients (for one large or two small servings):

  • ¼ cup chia seeds

  • 1 cup milk of choice (almond, oat, and coconut work beautifully)

  • 12 tablespoons maple syrup or honey

  • ½ teaspoon vanilla extract

  • Tiny pinch of salt

Flavor Variations:

  • Chocolate: Add 1 tablespoon cocoa powder + extra sweetener to taste.

  • Strawberry: Blend ¼ cup fresh or frozen strawberries into the milk before adding to the chia seeds.

  • Matcha: Add 1 teaspoon matcha powder.

Instructions

  1. Choose Your Flavor: Decide which flavor you’re making. For Chocolate or Matcha, you’ll add the powder directly with the base ingredients. For Strawberry, blend the strawberries with the milk until smooth.

  2. Combine in a Jar: Take a jar or a bowl with a lid. Add the chia seeds, your chosen milk, maple syrup, vanilla extract, and a tiny pinch of salt. If you are making the Chocolate or Matcha variation, add the powder now.

  3. Whisk Thoroughly: This is the most crucial step for a smooth pudding! Whisk the mixture vigorously for about 30 seconds to a minute. This ensures the chia seeds are evenly distributed and don’t clump together at the bottom.

  4. Rest and Re-Whisk: Let the mixture sit for 5 minutes. After it has settled, give it one more good whisk or shake to break up any clumps that may have formed initially.

  5. Chill to Set: Cover the jar or bowl and refrigerate for at least 4 hours, or ideally overnight. The pudding will thicken to a perfect, spoonable consistency as it chills.

  6. Serve and Top: When ready to eat, give the pudding a stir. Serve it straight from the jar, topped with your favorite fruits, nuts, seeds, or a dollop of nut butter.
