  • 8 oz udon noodles
  • 1 lb chicken breast, thinly sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, sliced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, sugar, salt, and pepper. Set aside.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add garlic and onion, and stir-fry for 1-2 minutes until fragrant.
  5. Add chicken slices and cook until browned and cooked through.
  6. Add bell pepper and broccoli, and stir-fry for another 2-3 minutes until vegetables are tender-crisp.
  7. Pour the sauce over the chicken and vegetables, and stir to combine.
  8. Add cooked udon noodles to the skillet, and toss everything together until well coated.
