  • 1 lb boneless, skinless chicken breast, sliced into thin strips
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
  • 1/2 tsp ginger, minced
  • 1/4 tsp red pepper flakes
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix together soy sauce, oyster sauce, cornstarch, sesame oil, ginger, and red pepper flakes. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add chicken strips to the skillet and cook until browned, about 5 minutes.
  4. Remove chicken from the skillet and set aside.
  5. In the same skillet, add garlic, onion, and bell pepper. Cook until vegetables are tender, about 5 minutes.
  6. Add zucchini to the skillet and cook for an additional 2-3 minutes.
  7. Return chicken to the skillet and pour in the sauce mixture. Cook for another 2-3 minutes, stirring constantly, until the sauce thickens.
  8. Season with salt and pepper to taste.
  9. Serve hot over rice or noodles.
