2 tablespoons olive oil
1 large onion, diced
2 cloves garlic, minced
2 carrots, sliced
2 parsnips, sliced
2 potatoes, cubed
1 cup turnips or rutabaga
1 stalk celery, chopped
6 cups vegetable broth
1 bay leaf
1 teaspoon dried thyme
