  • 1 lb boneless, skinless chicken breasts
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 package of gnocchi
  • Fresh parsley for garnish

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the diced onion, minced garlic, chicken broth, heavy cream, carrots, celery, thyme, oregano, salt, and pepper to the crockpot.
  3. Cover and cook on low for 6 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  4. Remove the chicken from the crockpot and shred it with two forks.
  5. Add the shredded chicken back to the crockpot along with the gnocchi.
  6. Cover and cook on high for an additional 30 minutes, until the gnocchi is cooked through.
  7. Serve the soup hot, garnished with fresh parsley.
