  • 1 package of cheese tortellini
  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 8 oz of mushrooms, sliced
  • 1 cup of chicken or vegetable broth
  • 1 cup of heavy cream
  • 1/2 cup of grated parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil a pot of water and cook the tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant.
