  • 1 pound corned beef, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1 cup heavy cream
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion and garlic, and sauté until softened.
  3. Sprinkle the flour over the onion and garlic, and cook for 1-2 minutes, stirring constantly.
  4. Slowly whisk in the chicken broth, making sure there are no lumps.
  5. Add the diced corned beef and sauerkraut to the pot, and bring to a simmer.
  6. Reduce heat to low and simmer for 15-20 minutes, stirring occasionally.
  7. Stir in the heavy cream and Swiss cheese until melted and combined.
  8. Season with salt and pepper to taste.
  9. Serve hot and enjoy!
