  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 package frozen cheese tortellini
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until the onion is translucent.
  2. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream, thyme, oregano, salt, and pepper.
  3. Add the frozen tortellini to the pot and cook according to package instructions, usually about 7-9 minutes.
  4. Once the tortellini is cooked, stir in the chopped spinach and let it wilt for a couple of minutes.
  5. Remove the pot from heat and stir in the grated Parmesan cheese until melted and combined.
  6. Serve the creamy tortellini soup hot, garnished with extra Parmesan cheese and a sprinkle of black pepper.
