  • 8 oz fettuccine pasta
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small red onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup vegetable broth
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water and cook the fettuccine according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and onion, and sauté until softened.
  3. Add the bell peppers, zucchini, and cherry tomatoes to the skillet. Cook until vegetables are tender-crisp.
