  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (180°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients and mix until well combined.
  4. Stir in the boiling water, the batter will be thin but that’s okay.
  5. Pour the batter into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  7. To make the frosting, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder, mixing until well combined.
  8. Slowly add the heavy cream and continue to beat the frosting until light and fluffy.
  9. Once the cakes are completely cool, frost the top of one cake layer, then place the second layer on top and frost the entire cake.
  10. Decorate the cake with chocolate shavings or sprinkles, if desired.
