  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1/2 cup of chicken or vegetable broth
  • 1/2 cup of heavy cream
  • 1 cup of shredded cheese (cheddar or mozzarella work well)
  • 1/4 cup of breadcrumbs
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.
  3. Add the cubed butternut squash to the skillet and cook for about 5 minutes, until slightly softened.
