  • 4 boneless, skinless chicken breasts
  • 1/2 cup butter, softened
  • 2 cloves of garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the softened butter, minced garlic, chopped parsley, salt, and pepper.
  3. Place each chicken breast between two sheets of plastic wrap and pound them to an even thickness.
  4. Divide the garlic butter mixture evenly among the chicken breasts, spreading it over one half of each breast.
  5. Roll up the chicken breasts, tucking in the sides to seal in the butter mixture.
  6. Coat each chicken breast in flour, dip in beaten eggs, and then coat in breadcrumbs.
  7. Heat vegetable oil in a skillet over medium-high heat.
  8. Carefully place the chicken breasts in the skillet and cook until golden brown on all sides.
  9. Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
