  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a mixing bowl, combine 1 cup of flour, 1/2 cup of powdered sugar, and softened butter. Mix until crumbly.
  3. Press the mixture into the bottom of the prepared baking dish to form a crust.
  4. Bake the crust for 20 minutes, or until lightly golden.
  5. In another mixing bowl, whisk together eggs, granulated sugar, 2 tablespoons of flour, lemon juice, and lemon zest.
  6. Pour the lemon mixture over the baked crust.
  7. Return the dish to the oven and bake for an additional 25 minutes, or until the filling is set.
  8. Let the lemon bars cool completely before cutting into squares.
  9. Dust with powdered sugar before serving.
