  • 1 cup long grain white rice
  • 4 cloves garlic, minced
  • 1/2 cup butter, melted
  • 1 cup chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts in a single layer in a 9×13 inch baking dish.
  3. In a small bowl, combine the minced garlic, melted butter, salt, pepper, paprika, thyme, and rosemary. Pour this mixture over the chicken breasts, making sure to coat them evenly.
  4. Sprinkle the rice around the chicken in the baking dish. Pour the chicken broth over the rice.
  5. Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
  6. Remove the foil, sprinkle the Parmesan cheese over the chicken and rice, and return to the oven, uncovered, for an additional 15 minutes or until the cheese is melted and bubbly.
  7. Remove from the oven and let it rest for 5 minutes before serving. Garnish with chopped parsley.
