  • 3 lbs boneless, skinless chicken thighs
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large pot, heat olive oil over medium heat.
  3. Add the chicken thighs and cook until browned on both sides. Remove from the pot and set aside.
  4. In the same pot, add the onion and garlic. Cook until fragrant.
  5. Add the carrots and celery, cooking until they start to soften.
  6. Pour in the chicken broth and heavy cream. Stir to combine.
  7. Return the chicken thighs to the pot and sprinkle with dried thyme.
  8. Simmer the stew on low heat for about 30 minutes, or until the chicken is cooked through.
  9. Stir in the Parmesan cheese until melted and well combined.
  10. Season with additional salt and pepper to taste.
  11. Serve hot, garnished with chopped parsley.
