  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 2 cups chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp cornstarch
  • 2 tbsp water

Instructions

  1. Season the chicken breasts with salt, pepper, thyme, and rosemary.
  2. Heat olive oil in a skillet over medium-high heat and brown the chicken breasts on both sides.
  3. Place the browned chicken breasts in the crockpot.
  4. Add the halved baby potatoes to the crockpot.
  5. In a bowl, mix together chicken broth, minced garlic, and grated parmesan cheese. Pour the mixture over the chicken and potatoes.
  6. Cover and cook on low for 6-8 hours or on high for 4 hours, until chicken is cooked through and potatoes are tender.
  7. In a small bowl, mix cornstarch and water to create a slurry. Stir the slurry into the crockpot and cook on high for an additional 30 minutes to thicken the sauce.
