  • 1 cup cherry tomatoes, halved

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar

Instructions

  1. Blanch the broccoli florets in boiling water for 2 minutes, then immediately transfer to an ice bath to cool. Drain and pat dry.
  2. In a large bowl, combine the blanched broccoli, red onion, cherry tomatoes, kalamata olives, feta cheese, and parsley.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
