  • 4 ears of corn, husked
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Place the husked corn on the grill and cook for about 10-12 minutes, turning occasionally, until the corn is charred and cooked through.
  3. Remove the corn from the grill and let it cool slightly before cutting the kernels off the cob.
  4. In a large bowl, combine the grilled corn kernels, diced bell peppers, chopped red onion, cherry tomatoes, and cilantro.
  5. In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt, and pepper to make the dressing.
  6. Pour the dressing over the salad and toss to coat evenly.
  7. Refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
  8. Before serving, taste and adjust the seasoning if necessary.
  9. Garnish with additional cilantro before serving.
