  • 1 can black beans, drained and rinsed

  • 2 cloves garlic, minced
  • 1 bell pepper, diced

  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 2 cups chicken broth
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large skillet, cook the sausage over medium heat until browned. Remove from the skillet and set aside.
  2. In the same skillet, add the onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
  3. Add the cumin, paprika, chili powder, salt, and pepper. Stir to combine.
  4. Add the rice, black beans, chicken broth, and cooked sausage to the skillet. Stir well.
  5. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked through.
