  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped fresh cilantro
  • 1 box cornbread mix
  • 1/3 cup milk
  • 1 egg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Add the onion, bell pepper, and garlic, and cook until the vegetables are soft.
  3. Stir in the black beans, corn, diced tomatoes, chili powder, cumin, paprika, salt, and pepper. Let the mixture simmer for 5-10 minutes.
  4. Transfer the meat mixture to a 9×13-inch baking dish and sprinkle the shredded cheddar and Monterey Jack cheese on top.
  5. In a separate bowl, prepare the cornbread mix according to the package instructions. Stir in the milk, egg, and chopped cilantro.
  6. Pour the cornbread batter over the meat mixture in the baking dish, spreading it out evenly.
  7. Bake the tamale pie in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and cooked through.
  8. Let the pie cool for a few minutes before serving. Garnish with additional cilantro, if desired.
