Ingredients

  • 1 kg tomatoes
  • 1 kg bell peppers
  • 1 kg onions
  • 1 cup olive oil
  • 1/4 cup vinegar
  • Salt, pepper, and red pepper flakes to taste

Instructions

  1. Start by washing and chopping all the vegetables into small pieces.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the onions and sauté until translucent.
  4. Add the eggplant, tomatoes, and bell peppers to the pot and cook until they start to soften.
  5. Season with salt, pepper, and red pepper flakes.
  6. Stir in the vinegar and let the mixture simmer for about 20 minutes.
  7. Once the vegetables are cooked through, remove from heat and let cool.
  8. Transfer the mixture into jars and seal tightly.
  9. Store in a cool, dark place for up to 6 months.
