  • 8 oz. Korean wheat noodles
  • 1/4 cup soy sauce
  • 2 tbsp gochujang (Korean chili paste)
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp sugar
  • 2 cloves garlic, minced
  • 1/2 cucumber, julienned
  • 1/2 carrot, julienned
  • 1/4 cup kimchi, chopped
  • 2 green onions, chopped
  • 1 boiled egg, sliced (optional)

Instructions

  1. Cook the noodles according to package instructions. Drain and rinse under cold water.
  2. In a small bowl, mix together soy sauce, gochujang, rice vinegar, sesame oil, sugar, and garlic to make the sauce.
  3. In a large bowl, combine the cooked noodles, cucumber, carrot, kimchi, and green onions.
  4. Pour the sauce over the noodles and vegetables. Toss until everything is well coated.
  5. Divide the noodles into serving bowls and top with sliced boiled egg, if desired.
