  • 1 whole chicken
  • 2 cups jasmine rice
  • 4 cloves garlic, minced
  • 2 shallots, sliced
  • 1 inch ginger, sliced
  • 2 pandan leaves
  • 1 lemongrass stalk, bruised
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Chili sauce for serving

Instructions

  1. Wash the chicken thoroughly and remove any excess fat.
  2. In a large pot, add enough water to cover the chicken. Add the garlic, shallots, ginger, pandan leaves, lemongrass, soy sauce, oyster sauce, sesame oil, salt, and pepper.
  3. Bring the water to a boil, then reduce heat and simmer for about 45 minutes or until the chicken is cooked through.
  4. Remove the chicken from the pot and let it cool. Reserve the chicken broth for cooking the rice.
  5. Rinse the jasmine rice until the water runs clear. In a rice cooker, add the rinsed rice and 4 cups of the reserved chicken broth. Cook the rice according to the rice cooker instructions.
  6. Once the chicken has cooled, chop it into bite-sized pieces.
  7. Serve the chicken over the cooked rice with chili sauce on the side.
