  • 1 cup sweet corn kernels
  • 1 cup coconut milk
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp melted butter

Instructions

  1. In a large mixing bowl, combine the sweet corn kernels, coconut milk, all-purpose flour, sugar, baking powder, and salt. Mix well until a thick batter forms.
  2. Heat a non-stick skillet over medium heat and brush with some of the melted butter.
  3. Scoop about 1/4 cup of the batter onto the skillet to form a dumpling. Repeat to make more dumplings, leaving some space between each one.
  4. Cover the skillet with a lid and let the dumplings cook for about 5 minutes, or until they start to puff up and become golden brown on the bottom.
  5. Flip the dumplings over and continue to cook for another 5 minutes, or until they are cooked through and golden brown on both sides.
  6. Remove the dumplings from the skillet and brush with the remaining melted butter. Serve hot and enjoy!
