  • 1 lb Italian sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 6 cups chicken broth
  • 1 cup ditalini pasta
  • 1/2 cup grated parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned. Remove from the pot and set aside.
  2. In the same pot, sauté the diced onion and minced garlic until fragrant.
  3. Add the diced tomatoes, chicken broth, dried basil, and dried oregano to the pot. Bring to a simmer.
  4. Stir in the ditalini pasta and cook until al dente, about 8-10 minutes.
  5. Return the cooked Italian sausage to the pot and simmer for an additional 5 minutes.
  6. Stir in the grated parmesan cheese until melted. Season with salt and pepper to taste.
  7. Serve the soup hot, garnished with fresh parsley.
