  • 1 pound pasta (such as rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Boil pasta according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, red onion, bell pepper, black olives, feta cheese, and parsley.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Chill in the refrigerator for at least 1 hour before serving.
