  • 1 tablespoon melted coconut oil

  • Pinch of salt

  • For rolling: powdered sugar, extra crushed pecans, or cocoa powder

Instructions

  1. Toast the Pecans (Optional but Recommended): For the deepest flavor, spread the pecans on a baking sheet and toast them in a 350°F (175°C) oven for 5-7 minutes, until fragrant. Let them cool completely before using.

  2. Process the Base: In a food processor, combine 1 cup of the pecans (reserve the remaining ½ cup for later), the pitted dates, maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt.

  3. Pulse to Combine: Pulse the mixture until it is finely chopped and begins to clump together. It should hold together when pressed between your fingers. Be careful not to over-process into a butter.

  4. Add the Final Texture: Add the remaining ½ cup of pecans to the food processor. Pulse just a few times until they are broken down into small pieces but still provide some texture.

  5. Chill the Mixture: Transfer the mixture to a bowl and refrigerate for 30 minutes. This makes the dough much easier to handle and roll.

  6. Roll into Balls: Using a small cookie scoop or a tablespoon, portion out the dough. Roll each portion firmly between your palms to form a smooth, compact ball.

  7. Coat and Decorate: Roll each ball in your chosen coating—powdered sugar, finely crushed pecans, or cocoa powder—until evenly covered.

  8. Set and Serve: Place the finished balls on a parchment-lined tray. For best results, refrigerate for another 15-20 minutes to firm up before serving.
