  • 1/2 cup almond flour
  • 1/2 cup protein powder
  • 1/4 cup honey
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 2 eggs
  • 1/4 cup almond milk
  • 1/4 cup chopped nuts or seeds (optional)

Instructions

  1. Preheat your oven to 350°F (180°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the pumpkin puree, almond flour, protein powder, honey, baking powder, cinnamon, nutmeg, and salt. Mix well.
  3. In a separate bowl, whisk the eggs and almond milk together. Add this mixture to the pumpkin mixture and stir until combined.
  4. If desired, fold in the chopped nuts or seeds for added texture.
  5. Spoon the batter into the muffin tin, filling each cup about 3/4 full.
