  • 1 lb boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 tablespoon red curry paste
  • 1 can coconut milk
  • 4 cups chicken broth
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 cup sliced mushrooms
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and sliced red bell pepper, and cook for another 2-3 minutes.
  3. Push the vegetables to the side of the pot and add the chicken breast. Cook until browned on all sides.
  4. Stir in the red curry paste, coconut milk, chicken broth, fish sauce, brown sugar, and lime juice. Bring to a simmer.
  5. Add the sliced mushrooms and cherry tomatoes. Cook for another 10-15 minutes, or until the chicken is cooked through.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro and lime wedges.
