  • 8 cups chicken broth
  • 1 onion, diced

  • 2 celery stalks, sliced

  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup flour
  • 1 cup heavy cream
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.
  2. Add carrots, celery, and mushrooms to the pot. Cook until vegetables are tender.
  3. Sprinkle flour over the vegetables and stir to coat. Cook for 1-2 minutes to remove the raw flour taste.
  4. Slowly pour in chicken broth, stirring constantly to avoid lumps.
  5. Add shredded rotisserie chicken, thyme, salt, and pepper. Bring the soup to a simmer and cook for 10-15 minutes.
  6. Stir in heavy cream and let the soup simmer for an additional 5 minutes.
  7. Taste and adjust seasoning if needed.
