  • 1 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 lb salmon fillet
  • Soy sauce
  • Sesame oil
  • Green onions, chopped
  • Sesame seeds
  • Vegetable oil

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rice with water and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes.
  3. In a small saucepan, combine rice vinegar, sugar, and salt. Heat over low heat until the sugar and salt dissolve.
  4. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Let the rice cool to room temperature.
  5. Cut the salmon fillet into bite-sized pieces and marinate in soy sauce and sesame oil for 30 minutes.
  6. Heat vegetable oil in a large skillet over medium-high heat. Add the marinated salmon and cook until browned and cooked through.
  7. In a separate skillet, heat vegetable oil over medium heat. Add the cooked rice in an even layer and cook until crispy on the bottom.
  8. Arrange the crispy rice on a serving platter and top with the cooked salmon pieces. Sprinkle with chopped green onions and sesame seeds.
