  • 1 cup cottage cheese
  • 2 cups rolled oats
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup mix-ins (chocolate chips, nuts, dried fruits, etc.)

Instructions

  1. Preheat your oven to 350°F (180°C) and line a muffin tin with paper liners.
  2. In a blender, combine cottage cheese, rolled oats, eggs, honey or maple syrup, baking powder, salt, and vanilla extract. Blend until smooth.
  3. Stir in your mix-ins of choice.
  4. Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  6. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
