  • 1 pound of chicken thighs, boneless and skinless
  • 1 pound of smoked sausage, sliced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 stalks of celery, chopped
  • 3 cloves of garlic, minced
  • 1 can of diced tomatoes
  • 4 cups of chicken broth
  • 1 tablespoon of Cajun seasoning
  • 1 teaspoon of thyme
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • 1 tablespoon of xanthan gum (for thickening)
  • Chopped parsley for garnish

Instructions

  1. Season the chicken thighs with salt, pepper, and Cajun seasoning.
  2. Heat olive oil in a skillet over medium-high heat and brown the chicken thighs on both sides. Remove and set aside.
  3. In the same skillet, brown the sliced sausage. Remove and set aside.
  4. Place the onion, bell pepper, celery, and garlic in the slow cooker.
  5. Add the diced tomatoes, chicken broth, thyme, and remaining Cajun seasoning to the slow cooker. Stir to combine.
  6. Add the browned chicken thighs and sausage to the slow cooker.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  8. Before serving, mix xanthan gum with a little water to create a slurry. Stir into the gumbo to thicken.
  9. Serve hot, garnished with chopped parsley.
