  • 6 large russet potatoes, peeled and diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 6 slices bacon, cooked and crumbled
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. Place diced potatoes, onion, garlic, and chicken broth in a slow cooker.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  3. Using a potato masher, mash some of the potatoes in the slow cooker to thicken the soup.
  4. Stir in heavy cream, cheddar cheese, and sour cream until well combined.
  5. Season with salt and pepper to taste.
  6. Cover and cook on low for an additional 30 minutes to allow the flavors to meld together.
  7. Serve hot garnished with crumbled bacon, shredded cheddar cheese, sour cream, and chopped chives.
