  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder

  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • 1/4 cup oats
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Add the cold cubed butter to the dry ingredients and use a pastry cutter or your fingers to mix until crumbly.
  4. In a separate bowl, beat the egg and vanilla extract together. Add this mixture to the dry ingredients and mix until a dough forms.
  5. Gently fold in the diced strawberries until evenly distributed throughout the dough.
  6. In a small bowl, combine the oats and brown sugar to make the crumble topping.
  7. Using a cookie scoop or spoon, drop spoonfuls of dough onto the prepared baking sheet. Flatten slightly with the back of a spoon and sprinkle with the crumble topping.
  8. Bake for 12-15 minutes, or until the cookies are golden brown around the edges.
