  • 2 chicken breasts, cut into bite-sized pieces
  • 2 zucchinis, sliced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 can of black beans, drained and rinsed
  • 1 can of corn, drained
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
  3. Add the onion, garlic, and bell pepper to the skillet. Cook until the vegetables are soft, about 5 minutes.
  4. Stir in the zucchini, black beans, corn, chili powder, cumin, paprika, salt, and pepper. Cook for another 5-7 minutes, or until the zucchini is tender.
  5. Serve hot, topped with your choice of shredded cheese, sour cream, and avocado.
