For the Apple Filling:

  • 6 cups apples, peeled and thinly sliced (about 56 medium apples; a mix of Granny Smith and Honeycrisp is ideal)

  • 2 tablespoons maple syrup

  • 1 tablespoon lemon juice

  • 1 teaspoon vanilla extract

  • 1 tablespoon cornstarch or arrowroot powder

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

For the Crisp Topping:

  • 1 cup old-fashioned rolled oats (certified gluten-free if needed)

  • ½ cup almond flour or all-purpose flour

  • ¼ cup coconut oil, solid (or cold vegan butter)

  • 3 tablespoons maple syrup

  • ½ teaspoon cinnamon

  • Pinch of salt

Instructions

  1. Prep and Preheat: Start by preheating your oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish or a similar-sized oven-safe skillet.

  2. Make the Apple Filling: In a large bowl, combine the thinly sliced apples, 2 tablespoons of maple syrup, lemon juice, vanilla extract, cornstarch, 1 teaspoon cinnamon, and nutmeg. Toss everything together until the apples are evenly coated. Pour this mixture into your prepared baking dish and spread it into an even layer.

  3. Make the Crisp Topping: In the same bowl (no need to wash it!), combine the rolled oats, almond flour, ½ teaspoon cinnamon, and a pinch of salt. Add the solid coconut oil and maple syrup.

  4. Combine the Topping: Use your fingers, a fork, or a pastry cutter to work the coconut oil and syrup into the dry ingredients. Mix until the mixture is crumbly and all the flour/oats are moistened. You want a variety of clump sizes for the best texture.

  5. Assemble and Bake: Sprinkle the oat topping evenly over the apple filling in the baking dish, covering it completely.

  6. Bake to Perfection: Place the dish in the preheated oven and bake for 30-35 minutes, or until the apple filling is bubbly around the edges and the topping is a deep, golden brown.

  7. Cool Slightly: Remove the crisp from the oven and let it cool for about 10-15 minutes before serving. This allows the juicy filling to thicken slightly.
