Ingredients
  

  • 1 lb ground beef
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz diced tomatoes, with juices
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons chipotle in adobo sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Fresh cilantro for garnish

Method
 

  1. Heat a large pot over medium heat and add ground beef, cooking until browned.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Stir in minced garlic and continue cooking for another minute.
  4. Mix in the chipotle in adobo, chili powder, cumin, and smoked paprika, cooking for an additional 2 minutes.
  5. Add diced tomatoes and their juices, along with the black beans, and stir to combine.
  6. Bring the mixture to a simmer, then reduce heat and cover, allowing it to cook for 20-30 minutes.
  7. Taste and adjust the seasoning with salt, if necessary.
  8. Serve hot, garnished with fresh cilantro.
