Ingredients
  

  • 2 medium sweet potatoes peeled and cubed
  • 1 medium head of cauliflower chopped into florets
  • 1 small onion diced
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh herbs for garnish optional

Method
 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, ground cumin, and smoked paprika, cooking for an additional minute.
  4. Add the cubed sweet potatoes and cauliflower florets to the pot.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat and let the soup simmer for about 20 minutes, or until the vegetables are tender.
  7. Use an immersion blender to puree the soup until smooth.
  8. Season with salt and pepper to taste, then serve hot.
  9. Garnish with fresh herbs before serving, if desired.
