Ingredients
  

  • 4 large sweet potatoes
  • 1 cup fresh cranberries
  • 2 medium apples peeled and diced
  • 1/4 cup maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup shredded sharp cheddar cheese
  • Salt and pepper to taste
  • 1/2 cup chopped pecans or walnuts optional

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then place them on a baking sheet.
  3. Bake the sweet potatoes for 45-60 minutes until they are fork-tender.
  4. Remove the sweet potatoes from the oven and let them cool slightly before handling.
  5. Cut the sweet potatoes in half lengthwise and scoop out the flesh into a mixing bowl.
  6. Add the cranberries, diced apples, maple syrup, cinnamon, nutmeg, and half of the cheese to the bowl with the sweet potato flesh.
  7. Mash the mixture until smooth and well combined, then taste and adjust seasoning.
  8. Spoon the filling back into the sweet potato skins, packing it slightly.
  9. Sprinkle the remaining cheese and chopped nuts on top.
  10. Return the filled sweet potatoes to the oven and bake for an additional 15-20 minutes.
  11. Remove from the oven and let cool slightly before serving.
