Ingredients
  

  • 1 lb mixed mushrooms cremini, shiitake, or button
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1/2 cup dry sherry
  • 1 cup heavy cream
  • 1 tsp thyme dried or fresh
  • Salt and pepper to taste
  • 1 tbsp olive oil

Method
 

  1. Sauté the onions and garlic.
