Method
- Prepare your campfire or portable oven.
- In a large bowl, mix pumpkin puree, sugars, and oil.
- Add the eggs and blend until mixed.
- In a separate bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt.
- Combine the wet and dry ingredients.
- Stir in chopped nuts if desired.
- Pour the batter into a greased baking pan.
- Bake over coals or in the oven for 30–40 minutes.
