Creative Ways to Enjoy Sweet Potato Rounds

Ingredients
  

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional toppings Greek yogurt, herbs, feta cheese, etc.

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes.
  3. Slice the sweet potatoes into even rounds, about 1/4 to 1/2 inch thick.
  4. In a large bowl, toss the sweet potato rounds with olive oil, garlic powder, smoked paprika, salt, and pepper.
  5. Arrange the sweet potato rounds on a baking sheet in a single layer.
  6. Roast in the preheated oven for 25-30 minutes, flipping halfway through.
  7. Remove from the oven and let cool for a few minutes.
  8. Serve with your choice of toppings, if desired.
