- Preheat your oven to 400°F (200°C).
- Wash and peel the sweet potatoes.
- Slice the sweet potatoes into even rounds, about 1/4 to 1/2 inch thick.
- In a large bowl, toss the sweet potato rounds with olive oil, garlic powder, smoked paprika, salt, and pepper.
- Arrange the sweet potato rounds on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, flipping halfway through.
- Remove from the oven and let cool for a few minutes.
- Serve with your choice of toppings, if desired.
