Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1/2 cup unsalted butter
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the chicken breasts by flattening them slightly with a meat mallet for even cooking.
  3. In three separate bowls, set up a breading station: one with flour, one with beaten eggs, and one with the breadcrumb mixture mixed with Parmesan cheese and Italian seasoning.
  4. Dredge each chicken breast in flour, shaking off the excess, then dip into the beaten eggs before coating with the breadcrumb mixture.
  5. Heat olive oil in a large skillet over medium-high heat. Once hot, add the breaded chicken breasts.
  6. Cook the chicken for about 4-5 minutes on each side until golden brown, then transfer to a baking dish.
  7. Bake the chicken in the preheated oven for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
  8. In a separate saucepan, melt unsalted butter over medium heat and add minced garlic, cooking until fragrant.
  9. Once the garlic is fragrant, reduce the heat and let the sauce simmer for a couple of minutes before adding fresh parsley.
  10. Drizzle the garlic butter sauce over the baked chicken just before serving, garnishing with additional parsley if desired.
