Crockpot Beef and Broccoli for Busy Home Cooks

Ingredients
  

  • 2 pounds beef flank steak sliced thin
  • 1 cup beef broth
  • 1 cup soy sauce
  • 2 tablespoons cornstarch
  • 2 cups broccoli florets
  • 4 cloves garlic minced
  • 1 inch fresh ginger grated
  • 2 tablespoons brown sugar

Method
 

  1. Prepare the beef by slicing it thinly against the grain.
  2. In a mixing bowl, combine soy sauce, beef broth, garlic, ginger, and brown sugar.
  3. Add the sliced beef to the crockpot and pour the sauce over it.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. 30 minutes before serving, add the broccoli florets on top of the beef.
  6. Mix cornstarch with a little water to form a slurry, then stir it into the sauce in the crockpot.
  7. Taste and adjust seasonings if necessary, then serve warm over rice or noodles.
